“The Steak House” True farm-to-table restaurant dining. Our team have produced a menu showcasing the best produce that Melaleuka Farm & Western Australia has to offer;

“Charlie’s Paddock” with a large playground and casual around seating;

“C.Y O’Connor Village Pub” with both casual and alfresco dining;

"Paperbark Burger Co" True farm-to-table smash pattie Burger Bar where we ‘WE FARM OUR OWN BEEF' at our farm in North Dandalup, W.A;

"Tilly's Garden " A unique, relaxed paradise with bespoke cocktails and an Asian-fusion inspired share style food menu.;

 

What the role is about:

  • Lead and oversee kitchen operations across the three kitchens, ensuring efficient and high-quality food production;
  • Develop and refine menus that reflect seasonal offerings, dietary trends and customer preferences, in collaboration with the Group Executive Chef;
  • Maintain consistency in food preparation and presentation standards across all locations;
  • Implement and enforce hygiene and safety standards in accordance with current health regulations;
  • Manage food costing, budgeting, inventory control and procurement to optimise profitability;
  • Recruit, train, mentor and supervise kitchen staff, fostering a culture of teamwork and professional growth;
  • Collaborate with TMG and management to create promotional strategies and special event menus.

 

Who we are looking for:

  • Proven experience as an Executive Chef or in a similar leadership role;
  • Strong culinary skills with a creative flair and a passion for innovation in menu development;
  • Leading by example, contributing to the daily operation of the kitchen ;
  • Have the ability to get your hands dirty and willing to help out with whatever is required;
  • Strong leadership, communication and organisational skills;
  • Ability to manage multiple priorities and thrive in a fast-paced environment and manage time wisely;
  • Knowledge of current food trends, dietary requirements, and culinary techniques;
  • Understanding and accountability of financial aspects of kitchen operations including food costing and budget management;
  • Food Safety Supervisor certification and compliance with health and safety regulations.
