Working across all our venues from Albany to Alkimos providing shift coverage for the teams on site and support to the Executive Group Chef, this position will be a key role for the Group and will bring variety and challenges for the right candidate, with a lot of growing potential.
Tillbrook Melaleuka Group (TMG ) is an award-winning WA hospitality business, with 5 unique venues across Perth and Albany: CY Precinct in Piara Waters, the Byford Tavern, the Wellard, the Amberton in Eglinton and Hybla in Albany.
We're on the search for an exceptional Sous Chef looking for a change of scenery and interested in bringing their skills in different kitchens with different teams across the venues. You will be working across all our venues from Albany to Alkimos covering leave and providing support to the Executive Group Chef and teams on site, the position will be a key role for the Group.
To be considered for the role you must be a fully qualified Sous Chef with prior experience working in busy and fast-paced kitchens and must be willing to travel to our venues on a rotation or as needed basis to fill-up shifts or provide assistance to the venue teams. You may be expected to travel to Albany 2-4 times a year (with the relevant travel and accommodation allowance provided for these trips).
What the role is about:
- Support the Head and Sous Chef in the day to day operation of the venues
- Supervise junior kitchen staff and ensure a smooth service
- Maintain kitchen hygiene, food safety and compliance internally and with health regulations
- Manage stock levels and assist with ordering ingredients from suppliers
- Able to work multiple sections and with flexibility with hours
- Maintain consistency in food preparation and presentation standards across all locations
- Ability to have a flexible roster and travel to other venues
What we are looking for:
- Able to travel and have a flexible roster, you will be working across 7 kitchens potentially.
- Proven experience as Sous Chef or in a similar leadership role with a strong focus on service
- Strong culinary skills with a creative flair and a passion for innovation
- Leading by example, contributing to the daily operation of the kitchen
- Strong leadership, communication and organisational skills
- Ability to manage multiple priorities and thrive in a fast-paced environment
- Knowledge of current food trends, dietary requirements and culinary techniques
- Food Safety Supervisor certification and compliance with health and safety regulations.
