Crystalbrook Kingsley has transformed Newcastle’s former Council Administration Centre into an elegant and sophisticated 130-room five-star hotel with a signature rooftop bar and restaurant, lobby bar and café along with two private meeting venues. THE ROLE:

Reporting to the Chef de Cuisine, as Sous Chef you will assist to foster a motivated team who provide the highest quality food experience that celebrates the best of different cuisines. Your responsibilities will include: 

  • Pioneering the guest satisfaction by delivering exceptional culinary experiences. 
  • Cultivating a culture of innovation and a penchant for pushing culinary boundaries. 
  • Providing hands-on leadership during all service periods and shifts. 
  • Collaborate closely with the F&B Service leadership team. 
  • Ensuring rigorous departmental training aligns with our high standards. 
  • Foster seamless communication and coordination with all hotel departments. 
  • Overseeing workplace health and safety procedures. 
  • Contribute to the creation of seasonal menus, promotional offerings, and event packages. 
  • Partnering with the Executive Chef to manage budget expectations through insightful analysis, forecasting, and controls. 
  • Supporting efficient procurement, production, preparation, and presentation of all culinary delights. 
  • Championing the hotel's food safety program to meet and exceed regulatory requirements. 
  • Cultivating an engaged team environment with an outstanding local reputation, attracting and retaining top culinary talent. 

 

ABOUT YOU:

Your talents include the following:

  • Minimum Certificate 3 Commercial Cookery
  • Proven leader who will drive the kitchen team and work with the floor team to produce and deliver award winning cuisine
  • Experience in the control of food and labour costs
  • Well-developed communication and time management skills
  • A strong visionary with an ambitious expectation of guest service
